As winemakers, it would certainly make sense for us to mature our beer in a wooden barrel. However, the fact is that beer in a wooden barrel would come into contact with oxygen and oxidation would occur. The beer does not mature in the barrel, but is aged. We do not like these oxidative sherry notes and prefer to infuse the beer with a noble distillate before bottling. This allows the beer to retain its freshness and Aroma.
