Trappist style tropical fruit driven aromas. Complex palate, with a lingering long aftertaste. The wort is split into two batches: one is inoculated with a Belgian abbey yeast which produces banana, paw paw and mango aromas; the other batch is inoculated with an American yeast that gives richness on the palate. With bottle aging the tropical fruit aromas dissipate to give rich caramel malt aromas.
