Assemblage is what the winemaker calls the method when two fermented wines are combined to make a fine sip. We have adopted this idea for the Amber Ale and made it our own. We split our brew into two halves and ferment each with its own yeast, including an American ale yeast and a Belgian Trappist yeast. After the main fermentation, both beers are reunited and matured as one beer.
Inspired by Belgian Trappist beers, malt and yeast aromas characterize the aroma of Amber Ales. Hop notes are only very subtle and are supported by the aroma of the coriander seeds used.
The beer flows into the glass amber in color and a fine beige head builds up. Fruity, spicy notes and a hint of caramel tickle the nose. Subtle aromas reminiscent of mango, banana and spicy honey float in the glass and invite you to take your first sip.
Sparkling and slightly effervescent at first sip, followed by an invigorating fruity-caramel taste on the tongue and palate. The finish is followed by a warming sensation in the throat, which is joined by a charming hop bitterness. In the mouth, fruity aromas and a light sweetness remain homely and inviting.
Sip after sip, the beer reveals its fine interplay of aromas with all its facets.
